Tasted (and drank) it for you! Il Tabarro 2018

We asked our friend and sommelier Angelo Turi to taste for us our Valpolicella Classico Superiore 2018 Il Tabarro by Valentina Cubi.

Angelo is a good (and old) friend of Tacco and with his 20 years’ experience as sommelier and “men in the wine” he tasted (and drank) it for us. He decided to taste this wine comfortably at home with some good company.

He matched this Valpolicella with some orecchiette pasta with fresh tomato and cacioricotta cheese.

On the first sip he said: "The Tabarro amazed me with its complexity. A Valpolicella with classic red fruit scents to which are added pleasant balsamic notes that make it complete and intriguing"

We thank Angelo for his comment and are happy that he enjoyed one of the wines in our portfolio.

The Azienda Agricola Valentina Cubi was established in 1969 by Valentina and her husband Carlo.

It is located in the heart of the Valpolicella hills and the vineyards are the most
valuable assets of the Valentina Cubi estate.

They are located between 290 and 350 metres above sea level and south/south-east oriented. They are mainly cultivated with ancient local varieties of Corvina, Corvinone, Rondinella and Molinara grapes, which are included in the “Valpolicella” blend. The unique composition of our lands rich in soil skeleton bestows our fresh and elegant wines an exclusive character, featuring natural fruity and spiced notes.

Since 2010 the Cantina is certificated organic on all their wines.

Tabarro grapes were hand harvested from mid-September until the second half of
October. Only manual harvesting for a careful control of the grapes. Traditional vinification in tronconic stainless steel tank.
The wine remained for 15 days on the skins.

At least 12 months in wooden barrels. After bottling the wine is aged for some months in the estate’s cellar before being released to the market.
